Pork Fajitas Empty Pork Fajitas

Pork Fajitas
1 small green bell pepper, cut into 1-inch-wide strips
1 small red bell pepper, cut into 1-inch-wide strips
1 small red onion, cut into 1/2-inch-thick rounds
2 teaspoons canola oil
Pork Tenderloin, grilled thinly sliced and cut into strips
1/4 cup nonfat sour cream
1/4 cup prepared salsa
4 6-inch or two 10-inch flour tortillas

1. Preheat grill to high or heat a large indoor grill pan over high heat. Lightly brush peppers and onion with oil and grill (after the pork is done) until lightly browned and soft, turning once, 3 to 7 minutes. (If grilling on an indoor grill pan, you may need to grill the vegetables in two batches.) Let cool on a cutting board.

2. Chop the onion; toss the vegetables with the pork in a large bowl. Serve the pork and vegetable filling with sour cream, salsa and tortillas for making fajitas.

Tip: To warm tortillas: Wrap in foil; bake at 300°F until steaming, about 5 minutes. Or wrap in barely damp paper towels and microwave on High for 30 to 45 seconds.

I do not eat as much meat as i once did, i continue to try to give up eating meats, but it is very difficult, but i think i am making progress.

I like Fajitas i am sure this recipe would be very good.

food is good....
I just picked up some lemon roasted chicken

I love chipolte dressing....LOL
the one I like has buttermilk in it;
Cindy's Kitchen...

I too am changing my diet to power bars by Greens Plus
and they do me alot of good so far I might write about it
in my Journal....

I am sure I will be eating the ol' favs once in a while though
just to be like everyone else... but the everday foods are
lacking in some kind of brain food that is in seaweed and the like...

Right, the roasted meat is one of my favs and it's not easy and it
really doesn't have to be given up totally it can be a treat that
is your 100% responsibility...LOL
